Then you must try these banana, date and HIDDEN zucchini muffins! And the best thing about it, your kids won’t notice the healthy bits as the zucchini is grated in and hidden in the batter.
It’ s a win-win, the kids eat a healthy snack and they enjoy it too.

Banana, Date & Hidden Zucchini Muffins
Makes 9 large muffins or 12 average size
What You’ll Need
8-10 dates
2 eggs
3 overripe bananas
80g coconut oil
Dry Ingredients
170g self raising flour (I use whole meal when I can)
1 tablespoons baking soda
1/2 medium zucchini (grated)
Half tsp Ground cinnamon
Half tsp Nutmeg
1/2 medium zucchini (grated)
2 tablespoons dark choc bits or blueberries
Recipe
Preheat oven to 170 degrees Celsius fan forced
Add 8-10 to a food processor and chop. Now add eggs, overripe bananas and melted coconut oil to the food processor. Blitz for 5 seconds on medium until combined.
In another bowl, add all the dry ingredients and mix them together. Add the wet mix above to the dry and with a spoon mix together. Add the grated zucchini and fold in.
Divide batter between muffin cases and bake for 12-15 mins or until golden brown and bounce back when touched in the middle.
You shouldn’t be able to see the green bits, but if you have very curious little explorers, peel the zucchini first before grating.
